These muffins are simply divine. They are incredibly moist and the streusel topping really sets them above any other blueberry muffin recipe.
Blueberry Streusel Muffins
Preheat oven to 400 degrees. Line or grease 24 large muffin tin cups.
Sift flour into mixing bowl. Add sugar, baking powder, and salt and mix until combined. In a separate large bowl, add eggs, oil, milk, and vanilla. Whisk together using a fork until combined. Make a well in the middle of the dry ingredients and pour in liquid mixture. Using a spoon, fold the wet ingredients into the dry until just combined (do not over-mix). The batter will be very thick. Fold blueberries into batter.
For topping, mix softened butter, brown sugar, flour, and cinnamon together until it forms moist crumbs. (I use a fork.)
Fill muffin tins about 2/3 to the top with batter and then sprinkle on topping. Bake at 400 degrees for 20-22 minutes.
